摘要:
群体感应(quorum sensing,QS)是一种微生物细胞间进行信息交流的系统。腐败菌的一些特性也受到QS系统的调控。在水产品保鲜领域,腐败菌的群体感应逐渐成为研究热点。本文中,笔者着重对水产品中微生物的群体感应作用机制、主要腐败菌的群体感应现象以及群体感应抑制剂等方面的研究进展进行概述,并对目前群体感应研究中所出现的问题及发展进行了总结及展望,旨在为以群体感应为基础的新型食品保鲜材料的开发提供参考。
