摘要:
筛选得到1株在41 ℃可以良好生长的耐高温酵母菌，并对其特性及发酵性能进行研究。结果表明：该菌的最适生长pH为5.0，转速180 r/min，最高生长温度45 ℃。在41 ℃和初糖质量浓度为93.0 g/L的条件下发酵24 h后，乙醇质量浓度达到44.0 g/L，乙醇得率为93.0%。
